Every day I feel like I am rushing to make lunch or honestly, a lot of times I forget… until after Blake’s nap, so there’s that, Mom win. So I have been trying to get somewhat of a routine going, you know one where we spend time together during lunch, make it a little thing we do together during the chaos of the day. Generally, we still don’t have a ton of time, so I look for quick easy meals that still give us like 10 minutes to have some Mama/baby time, but you know, enjoy our food.
A recent go to, is Minute® Ready to Serve Organics. We LOVE rice in our family, like love it. In fact, the word love might very well be an understatement. We eat it all the time because it’s just so easy to make and a great side dish with everything. Well, now they have these cute little cups that you just peel back the top, pop in the microwave for 60 seconds and there you have it, a good little lunch. I love to serve it with turkey for Blake and then a cheese or something. Usually I just eat it by itself and throw a little garlic salt on top, sometimes leftover chicken from the night before. It’s been the BEST, guys, because it literally takes 2 minutes to make it all, then Blake and I get a few minutes of “us” time before her nap and before I go dive back into work.
Favorite quick lunch recipe:
+Minute® Ready White Rice
- Cook rice as normal
- Add a dash of garlic powder, onion powder and salt
- Mix in 1/2 cup of broccoli
