I’m so excited to share a recipe today because it’s one of my favorites, and I eat it at least once a week, if not more currently. When Albertsons reached out to partner together on a recipe for Open Nature® products I knew immediately this would be the one I shared! So I am just going to dive in with the recipe, but underneath I’ll share some details on Open Nature and why I love their products so much – if you’ve followed me for awhile y’all already know this. 😉

RECIPE:
Here’s what you need:
- Spinach
- Avocado
- Onion
- Tomatoes
- Open Nature Balsamic Vinaigrette
- Open Nature Chicken Breast
- Open Nature Sliced Almonds
Directions:
The “hardest” part of this entire thing and I say hardest with quotations because it’s not hard 😉 is making the chicken. Usually I will make this Sunday night and then I use it throughout the week for different things. I just pop mine in either the crockpot or instant pot for the recommended time for chicken breasts with a quick splash of the Open Nature Balsamic Vinaigrette and then a dash of salt. Once it’s falling apart, I pull it out and let it cool then bag it up to put in the fridge.
BUT if you’re going straight to the salad making you don’t need to bag it up. This part is simple and done on your preference. I dice up the avocados, tomatoes and then slice the onion into thin rings and toss it all into the spinach. After that I toss it in the Open Nature Balsamic Vinaigrette and top it with a handful of their sliced almonds. Easy as that! Then serve!
